Butternut soup

Deceptively delicious! I'm loving my winter farm share. Supplemented at the farmers mkt.
Sauté a chopped onion and a large whole garlic clove. No need to chop as this will all be puréed in the Magic Bullet. Add Aleppo pepper and thyme then small amount of veggie broth. I used No-Chicken Stock. Quarter and seed a small butternut squash and pressure cook it all together 10 minutes till well done.
Purée the onion and garlic with more veg stock, peel the squash.
Next sauté a sliced potato, turnip and celery stalk and return the onion stuff and the squash to pot, stir then simmer till yum.
I threw in ~1/4cup chipotle salsa for kick.
Serve with Ornish Irish soda bread.
Next day: reheat with frozen corn added to change it up!
