Sweet Potato Stew

Based on Mark Bittman's vegan recipe NYT 1/1/12, with apple, onion, chili powder, ginger: a treat and quick!
Added a blended kaffir lime leaf and substituted imitation coconut extract and splash of soymilk for the coconut milk.
Served over rice for lunch with cheesy bread.
