Moussaka

What do vegetarians eat? Almost fat free moussaka with noodles
Time consuming and exquisite.
Broiled eggplant slices
Mushroom tomato sauce with TVP crumbles, red wine and cinnamon/nutmeg
Faux b├ęchamel made of potato and some "weird" pantry ingredients: miso, nutritional yeast, tofu. . .
I know I KNOW! But it works!
