Look carefully & you can find vegetarian dumplings in the freezer at Asian markets.
Steamed simply, on a bed of spinach; meanwhile mix up a dipping sauce: soy sauce, balsamic vinegar, mustard, honey, hoisin, crushed red pepper, dash of sesame oil, or whatever Chinese condiments you want to blend up.
