Lentil soup!

Slice 6 shallots
Dice 3 carrots, 2 celery
Sauté with Italian seasoning, then toss in 2 dried shiitake mushrooms, splash of Manischewitz and a few cups of water.
Find 2 cups cooked lentils in the freezer, add to the simmer.
When nearly done: pluck out those mushrooms, chop then purée them in blender with a squirt of mustard and 1/2 cup water, S&P to taste.
Stir it up, little darling. This soup tastes fine!

Pumpkin STRATA

A Weight Watchers recipe I adore! Like a savory bread pudding with baked Kabocha squash pudding matrix.
Layers of onion sautéed with thyme, and corn kernels, baguette, light and fat-free cheddar. Oh my!

I use corn instead of chilies, and cook the onion fully before assembly.

Broiled eggplant slices
Mushroom tomato sauce with TVP crumbles, red wine and cinnamon/nutmeg
Faux béchamel made of potato and some "weird" pantry ingredients: miso, nutritional yeast, tofu. . .
I know I KNOW! But it works!

Pierogi Time !

Sautéed onion with frozen pierogies yummy!!!

Sweet Potato Stew

Based on Mark Bittman's vegan recipe NYT 1/1/12, with apple, onion, chili powder, ginger: a treat and quick!
Added a blended kaffir lime leaf and substituted imitation coconut extract and splash of soymilk for the coconut milk.
Served over rice for lunch with cheesy bread.

Baked potatoes with chili found stashed in freezer.

Just a little stirfry

Mock duck
on brown rice

Miso soup

Kombu dashi (stock)
4 c water
1 strip dried kombu
2 sliced mushrooms
Sliced green onion
Cook stock 5 minutes in pressure cooker
Put 1-2 T miso in each bowl (i used 22gr) and mix with a small amount of stock, then ladle in the soup with its mushrooms and scallions. Add tofu, soy sauce to taste

Banana Oat Walnut bread

Yeast bread with banana?
Yes, ma'am!
Mostly whole wheat with a little honey, even less oil, and some nonfat dry milk.

Side of steamed broccoli
We are surprised how great this sandwich tastes

Breakfast sandwich

Onion (just 2 slivers)
Sauté with oil, then brandy, S&P, Bragg Aminos
When cooked turn off heat, stir in cheddar and feta
Serve on whole wheat bread

Bush's Best Baked Beans (veggy)


Look carefully & you can find vegetarian dumplings in the freezer at Asian markets.
Steamed simply, on a bed of spinach; meanwhile mix up a dipping sauce: soy sauce, balsamic vinegar, mustard, honey, hoisin, crushed red pepper, dash of sesame oil, or whatever Chinese condiments you want to blend up.
Inexpensive lunch on a chilly day

Salad on a Stick

Unvented for the occasion of a New Year's Day drop-in knitting party.
You *can* please all of the girls, all of the time, despite their allergies and aversions.
Mince fresh horseradish, a few peppercorns, salt in Cuisinart. Add a chopped avocado and equal part feta (use the empty avocado to measure), and a touch of wasabi powder
Choose larger or longer spinach leaves to roll up with a thin slice of pear, some filling and a toothpick. Serve with a nice home-brewed dressing.
