Pasta egg noodle. Weigh egg. Add pinch of salt and 1.5x flour
Ratio is 3:2 flour:egg
Kneads easily

Put medium pot of water on to boiling while you make the egg noodles.

Franks and Beans, oh so Tone on Tone

A delicious, rather beige dinner.
Oven roasted cauliflower with curry powder and potatoes with Northwoods Seasoning; black beans transformed into BBQ baked beans by the addition of everyone's fave condiments: ketchup, mustard, molasses, soy sauce and agave. Tofu pups complete the neutral color scheme!

Burgers and Fries

What DO vegetarians* eat?
The All American: veggy burgers, oven fries, home baked buns (white flour, cornmeal and teff); salad with apple, pistachio and buttermilk honey mustard thousand island dressing.
* I'm technically an omnivore but I prefer vegetarian food, cook it 99% of the time.

Pad Thai brunch

Inspired by a recipe in Bon Appetit and a radio interview on Thai Street Food. Additions and subtractions based on pantry.
Added: julienned turnip, kaffir lime leaf, dulse, dried salted black beans, sesame oil, sautéed onion and collards.
I think the combination of lime leaf, tamarind and brown sugar is divine. So did not really follow the recipe but did use the scheme of it.

Kitchen Sink Croquettes

Take whatever leftovers you can find...blend in the Cuisinart with a stale roll aka bread crumbs, a couple handfuls rolled oats, and an egg. Make patties coated in a thin shake of sieved flour and sauté till browned on both sides; transfer pan to a 350• oven to finish. Serve with ketchup (and bowls of leftover soup)
Okay? You want to know my leftovers dontcha?
Some cooked seasoned chickpeas and vegetables; caramelized onion and collard sauté. But almost anything goes. Tasted pretty great, something like tofu burgers or falafel.

Bread (roll) Dressing

Stuffing! No bird needed.
Sauté chopt onion, celery, turnip with thyme and savory. Meanwhile soak stale home baked rolls in pear cider from Emily Zass (don't say it fast)
Combine all together with veggie stock (I used kombu-shiitake dashi) and when cooler, stir in one egg and bake.
JB: "What made it spicy?"
CB: "I did."
Really, it was some Aleppo pepper.
Serve with soup and salad.

Butternut soup

Deceptively delicious! I'm loving my winter farm share. Supplemented at the farmers mkt.
Sauté a chopped onion and a large whole garlic clove. No need to chop as this will all be puréed in the Magic Bullet. Add Aleppo pepper and thyme then small amount of veggie broth. I used No-Chicken Stock. Quarter and seed a small butternut squash and pressure cook it all together 10 minutes till well done.
Purée the onion and garlic with more veg stock, peel the squash.
Next sauté a sliced potato, turnip and celery stalk and return the onion stuff and the squash to pot, stir then simmer till yum.
I threw in ~1/4cup chipotle salsa for kick.
Serve with Ornish Irish soda bread.
Next day: reheat with frozen corn added to change it up!

Thai Cabbage spaghetti

Last night's in-progress pix were eaten by the iPhone apparently. So as I recall...
Boil thin whole wheat spaghetti, drain and toss with sesame oil.
Use same water to pre-boil a sliced small cabbage and a cup of frozen peas.
Wok-fry sliced leek, minced garlic and a sliced turnip.
Thai green curry paste
Soy sauce
The cabbage water, cornstarch
Pineapple juice

Local kale and pasta

The winter farmers market! Easy to spend over $30. on cabbage, kale, collards, turnips, squash and sweet potatoes.
Ahhh but what sweet, delicious kale, sautéed with Greek seasoning, Aleppo pepper and Mirin.
Serve with pasta and Field Roast sausages.
(note experimental Greek twist rolls)

Split P soup

Simple quick: sautéed in olive oil, leek, carrot, celery, italian seasoning, mirin; add a cup of the dried peas, Not-Chicken stock, kombu-shiitake dashi, pressure cooked fast while Joel was driving home; add a splash of Bragg Aminos at the end, and crushed red pepper to taste.

Served with green salad and toast

Best Baby Bok choy

After cooking up the mock dock I chopped up the baby Bok choi and sautéed it in the same (not yet washed) pan. Added some canola oil cooked it then splash of Mirin and Penzeys 4S. Delish with mandarin pancakes and Mun Cha'i Ya

It's the caraway flavor we really love so this Faux Rye aka Caraway Oat Bread is yum and rye-less.
Rye has less gluten so it's harder to work with.

Lentil soup!

Slice 6 shallots
Dice 3 carrots, 2 celery
Sauté with Italian seasoning, then toss in 2 dried shiitake mushrooms, splash of Manischewitz and a few cups of water.
Find 2 cups cooked lentils in the freezer, add to the simmer.
When nearly done: pluck out those mushrooms, chop then purée them in blender with a squirt of mustard and 1/2 cup water, S&P to taste.
Stir it up, little darling. This soup tastes fine!

Pumpkin STRATA

A Weight Watchers recipe I adore! Like a savory bread pudding with baked Kabocha squash pudding matrix.
Layers of onion sautéed with thyme, and corn kernels, baguette, light and fat-free cheddar. Oh my!

I use corn instead of chilies, and cook the onion fully before assembly.

Broiled eggplant slices
Mushroom tomato sauce with TVP crumbles, red wine and cinnamon/nutmeg
Faux béchamel made of potato and some "weird" pantry ingredients: miso, nutritional yeast, tofu. . .
I know I KNOW! But it works!
