Pho-inspired Lentil Soup and Very Blueberry Muffins

Roast chopped onion, carrots, celery, garlic, ginger.
Fill a tea ball with pho spices: 2 whole cardamom pods,1 star anise, fennel seeds, tiny cinnamon stick, 3 cloves.
Blend the 3 cloves of garlic with water and add this purée to the pot with red and brown lentils, water, a chopped kale leaf and the veggies. Simmer. Add boiled bean thread noodles to serve. This was delicious. Heck I only blog the successes.

Mixed Greens w Ziti

One of those "no food in fridge" miracles. From freezer stash: 5 types of greens, pesto; from fridge, a bit of salsa, tomato sauce,cheese.

Grilled fish, plantains, avocado with nice spicy lime marinade at the beach. I ate the whole thing and gave some crumbles to the skinniest beach dog!

Some kind of Succotash

Corn Lima beans flavored with onion garlic chili and. . . . Penzey's Rocky Mountain Seasoning.

Meefballs with Peanut Sauce

One of those incredibly quick, delicious pantry concoctions.
-mix with 2 cups water
4 tbsp or 2 oz. peanut (or almond) butter
Equal amount Mr Yoshida's marinade
Splash of chinese hot chili bean sauce to taste

You can simmer this in the oven. I'm trying the stovetop tonight. add a 10-ounce bag of Quorn Meatless Meatballs (best) or your fave balls.
Let it warm until the Balls heat and the sauce thickens a bit, about 1/2 hour.
I will serve it tonight with rice noodles and steamed broccoli.
Yum!

Bread and sandwiches

Baked another loaf of multigrain this morning.
How I like to cut my sandwiches: in half then one half in halves.

A Surprise Dinner Guest

Edward on 2 hours' notice! Yay! Bake a bread (and 2 burger buns), simmer up some frozen chicken to add to E's lentil soup.
Wha? Out of ketchup to put on our veggy burgers! Saved the day. Googled a recipe and mixed it up, perfect even uncooked. Yum! The recipe is here: http://www.instructables.com/id/Ketchup-Catsup-Recipe/step1/Ingredients/?f=m (Make half batch but only add a splash of water if serving uncooked.)
No brainer chicken stew: put the chicken pieces in a small heavy pot, cover and simmer on low for a couple hours. Add to the soup for your non-veggy friends.

The old sloppy joe formula

The dinner "sloppy Joel" is based on an old 1960s recipe containing lots of beef and ketchup!

Sloppy Joels and Mashed potatoes

Chop up a small onion and a celery stalk, sauté while you boil water for the TVP. Put a cup of TVP in a bowl and mix in a bunch of good flavors (photo) before pouring on the boiling H2O.
While this simmers add some molasses, Bragg Aminos and a tbsp if your favorite salsa.
The potatoes are great when mashed thru a sieve, stir in cream cheese, soy milk, salt and pepper.

Colorful, enhanced leftovers

Make a super quick sauce to moisten pasta: mix a small can of tomato paste with 1-1/2 cans water, splash of red wine, garlic salt and oregano right in the empty half of the casserole dish. Bake to reheat and serve with fresh steamed broccoli.

Catching up

Here are a few photos of October 2011 dinners that I did not write down, but snapped pix.

Baked Penne w/ lima beans and spinach

Slice and sauté an onion, 2 cloves chopped garlic. Add one box of frozen spinach while the penne cooks.
What else did I put in there? Dried savory, 1 cup fat free cottage cheese in glops, a small can tomato paste, splash red wine and 2 big ladles of cooked baby limas, 2 oz. reduced fat shredded cheese on top
On top, baguette crumbs seasoned with garlic and chili powder. Spread over casserole and spritz misto oil.

Serve with baked sweet potato and yogurt.
