Pasta !

Maybe even tipsy from pre-New Years toast
To go out, or stay home and. . .feast?
Decision: heat a jar of sauce, add homemade frozen pesto and jarred red peppers. Heat a baguette and boil up that fancy pasta, Strozzapreti.
Serve on red checkered tablecloth with Prosecco.

Chickpea Soup

Or, stew?
What to make when you have
3 carrots
1 onion
1 potato
Frozen corn to purée for "stock"
cooked chickpeas
Seasonings: paprika, chile, mirin, bragg's, shoyu, splash of balsamic, grated parm

Horseradish Hummus

We got fresh horseradish root in our farmshare crate this week. Yay! I put some into the hummus, along with the usual suspects. (Note fresh squeezed OJ instead of adding olive oil)

Pho-inspired Lentil Soup and Very Blueberry Muffins

Roast chopped onion, carrots, celery, garlic, ginger.
Fill a tea ball with pho spices: 2 whole cardamom pods,1 star anise, fennel seeds, tiny cinnamon stick, 3 cloves.
Blend the 3 cloves of garlic with water and add this purée to the pot with red and brown lentils, water, a chopped kale leaf and the veggies. Simmer. Add boiled bean thread noodles to serve. This was delicious. Heck I only blog the successes.
